Ha Giang’s rugged mountains and golden rice terraces are not its only treasures. The region’s cuisine reflects the daily life, heritage and traditions of its many ethnic minorities. Local markets and village kitchens offer authentic flavors shaped by generations of farmers and villagers. Here are four dishes that define the taste of the highlands.
1. Horse Meat Hotpot (Thắng Cố)
Thắng Cố is Ha Giang’s most iconic dish, a hotpot made from horse meat simmered with herbs and spices. Originally a Hmong specialty served at village markets and festivals, Thắng Cố has become a symbol of community meals. Its rich, hearty flavor is best experienced at local markets like Dong Van or Meo Vac, where steaming pots draw villagers and travelers alike.
2. Free-Range Roasted Pig
Known as “Lợn cắp nách” (carried-under-arm pig), this free-range pig is raised naturally by farmers and roasted whole with a mix of forest spices. The meat is tender, the skin crispy, and the aroma distinct. Often prepared for weddings, New Year celebrations or welcoming guests, it’s a dish that embodies heritage, traditions and authentic daily life.
3. Five-Color Sticky Rice
This colorful sticky rice is made using natural plant dyes to create five vibrant hues: red, yellow, green, purple and white. It’s a signature dish of the Tay, Nung and Dao people, especially during festivals. Each color carries meaning — prosperity, fertility, harmony — and reflects the ethnic minorities’ deep connection to their land and culture.
4. Au Tau Porridge
After a day trekking or exploring, nothing warms you like a bowl of Au Tau porridge. Made from the roots of the au tau plant, slow-cooked with rice, pork and herbs, this dish is said to restore energy and ward off the chill of the highlands. It’s a traditional comfort food still enjoyed by farmers after working in the fields.
